Anyone who takes part in sport knows that nutrition is the key to recovery and well-being. And sometimes it’s the simplest combinations that are true nutritional wonders. Our beetroot and fennel salad gives you exactly that – and tastes wonderfully fresh and aromatic.

Beetroot is a real superfood: it’s rich in folic acid, potassium, vitamin C and iron – perfect for blood circulation and oxygen transport in the body.Fennel is packed with fibre, vitamins A, C and K, helps relieve bloating and aids digestion. Feta provides valuable protein and calcium, whilst the pine nuts contribute healthy fats, magnesium and a lovely crunch. The dish is rounded off with the juice of a fresh lemon and high-quality olive oil, which is rich in unsaturated fatty acids and antioxidant polyphenols.

So this salad isn’t just a treat for the palate, but also an energy booster for body and mind!

Recipe for 2 people: Beetroot and fennel salad with feta and pine nuts

  • 2 medium-sized beetroots
  • 1 small fennel bulb
  • 2 tbsp pine nuts
  • The juice of a medium-sized lemon
  • 2–3 tbsp high-quality olive oil
  • Salt and coarsely ground pepper from the mill
  • 100 g feta cheese

Method:

Boil the beetroot in a saucepan of water until tender (approx. 30–40 minutes, depending on size). Then leave to cool, peel off the skin, quarter it and cut into smaller pieces.

Slice the fennel very thinly using a mandoline or a sharp knife and add to the beetroot.

Toast the pine nuts in a frying pan without any fat until golden brown, then leave to cool.

Drizzle the lemon juice and olive oil over the beetroot and fennel. Season to taste with salt and freshly ground pepper, then mix everything together well.

Divide the salad between two plates. Crumble the feta cheese roughly over the salad.

Finally, sprinkle the toasted pine nuts on top – and your healthy power salad is ready!

Tip: This salad is perfect as a light lunch or as a colourful side dish to go with grilled fish or chicken.
