Ready for a treat: Leo Trixl’s sustainable fish farm in the Kitzbühel Alps

Tucked away in the idyllic countryside of Fieberbrunn, Tyrol, lies a true gem of sustainable fish farming. The Trixl family has established an aquaculture business here that delights not only local gourmets but also fish lovers from further afield. Since its foundation in the 1970s by Leonhard Trixl, the business has developed into one of Tyrol’s leading fish farms. With his son Leo, who took the helm in 2017, the family is passionately continuing its success story.
Leo Trixl, a qualified master of fisheries management, runs the business using state-of-the-art technology and in harmony with nature. A unique selling point of the Trixls is that they oversee the entire rearing process – from egg to finished fish product. Tyrolean brown trout and lake char are the stars of their production. The family is particularly proud of the reintroduction of the Tyrolean brown trout, a native species that has been saved in the region through targeted breeding measures.
Sustainability is the Trixls’ top priority. By using their own springs, which provide over 100 litres of fresh water per second, they avoid the use of chemicals. The fish live in spacious tanks supplied with fresh spring water from the surrounding mountains. These species-appropriate rearing conditions and a balanced diet guarantee the high quality of Trixl’s products.
Leo Trixl not only focuses on regional marketing and quality assurance, but also supplies the top hotels and restaurants in the Kitzbühel Alps. His high-quality fish feature on the menus of the region’s finest restaurants, where they are transformed into delicious dishes by discerning chefs. With his focus on fresh, regional produce, Leo plays a key role in enhancing the region’s culinary reputation.
As a member of the “AMA-Genussregion” and the Tyrolean Association of Direct Marketers, he guarantees not only that his products are of regional origin, but also that they are transported over short distances. As well as supplying top restaurants, he also supplies food lovers directly in the region and beyond.
Healthy eating with fish

Fish is not only delicious, but also incredibly healthy. It is packed with omega-3 fatty acids, which protect the heart, reduce inflammation and lower cholesterol levels. Fish is also an excellent source of protein, which supports the building and repair of tissue and strengthens the immune system.
But that’s not all: fish also provides important vitamins and minerals such as vitamin D, vitamin B12, iodine and selenium, which are essential for bone health, the immune system and metabolism. Particularly low-fat varieties of fish, such as trout, contribute to heart health as they are low in saturated fats.
However, how the fish is prepared is important: steaming, grilling or baking are ideal methods for reaping the full health benefits. Breaded or deep-fried fish may be less healthy due to the added oil and calories. Experts recommend including two fish meals a week in your diet – for an all-round healthy and enjoyable experience!
