Tucked away in the idyllic landscape of Fieberbrunn, Tyrol, is a real gem of sustainable fish farming. The Trixl family has built up an aquaculture business here that not only delights regional gourmets, but also fish lovers from further afield. Since it was founded in the 1970s by Leonhard Trixl, the business has developed into one of the leading fish farms in Tyrol. With son Leo, who took over the helm in 2017, the family is continuing its success story with passion.

Leo Trixl, a trained master fisherman, runs the business using state-of-the-art technology and in harmony with nature. One of the Trixls' unique selling points is that they control the entire rearing process - from the egg to the finished fish product. Tyrolean brown trout and Arctic char are the stars of their production. The family is particularly proud of the reintroduction of the Tyrolean brown trout, a native species that has been saved through targeted breeding measures in the region.

Sustainability is a top priority for the Trixls. By using their own springs with over 100 litres of fresh water per second, the use of chemicals is avoided. The fish live in large tanks that are supplied with fresh spring water from the surrounding mountains. This species-appropriate husbandry and a balanced diet guarantee the high quality of Trixl products.

Leo Trixl not only focuses on regional marketing and quality assurance, but also supplies the top hotels and restaurants in the Kitzbühel Alps. His high-quality fish can be found on the menus of the best restaurants in the region, where they are transformed into delicious dishes by discerning chefs. With his focus on fresh, regional products, Leo makes a significant contribution to strengthening the region's culinary reputation.

As a member of the "AMA-Genussregion" and the Association of Direct Marketers in Tyrol, he guarantees not only the regional origin of his products, but also short transport routes. In addition to top restaurants, he directly supplies gourmets in the region and beyond.

Healthy enjoyment with fish

Fish is not only delicious, but also incredibly healthy. It is full of omega-3 fatty acids, which protect the heart, reduce inflammation and lower cholesterol levels. Fish is also an excellent source of protein, which supports the formation and repair of tissue and strengthens the immune system.

But that's not all: fish also provides important vitamins and minerals such as vitamin D, vitamin B12, iodine and selenium, which are essential for bone health, the immune system and the metabolism. Low-fat fish varieties in particular, such as trout, contribute to heart health as they contain little saturated fat.

However, preparation is important: steaming, grilling or baking are ideal methods to fully utilise the health benefits. Breaded or deep-fried fish can be less healthy due to the added oil and calories. Experts recommend integrating two fish meals a week into your diet - for an all-round healthy eating experience!
